The all important egg, why is it so great? And why are so many people only eating part of it? The truth is the most important part of the egg is being thrown down the drain half the time, and people are missing out on some crazy goodness! I ate this for breakfast yesterday and it didn’t dissapoint, with 2 eggs scrambled in with spinach, and bell peppers, topped with yummy fresh salsa from my local market, mmmm yum, the best!
So what makes this meal the total package? Well Ill tell you, eggs and spinach are like the food powerhouses, first of all they are both packed with protein, yep, you heard right, spinach is packed with protein! Spinach is full of protein and a ton of vitamins and minerals! And the yellow bell pepper I threw in there is packed with vitamin C and fiber! Top it with some lypocene from that salsa and your body is loving you, and its only 8 am! Lets not forget to talk about that egg that I was raving about like it was the super hero of all foods haha…. I really believe that we should not be throwing out the yolk, I mean do what you want, but I am eating the yolk! But really, unless you are watching your cholesterol, there’s really no reason to just be eating the whites. Every once in a while I might do 2 egg whites and one yolk, but mostly I eat the whole egg and here’s why…. it is jammed packed with tons of vitamins ranging from B6, folate, B-12, A, D, E, and K and more, and all of those are not found in the egg whites for sure! Also found in yolks are phospholipids, which is a type of fat important in building cell membranes! These phospholipids may benefit cardiovascular health, metabolic health, memory and cognitive function! They also have antioxidants which we all need, carotonoids, and phosvitin! I am not saying to throw out the egg whites either though, there is lots of protein in those for sure, which is very beneficial especially when doing resistance training! I don’t know about you, but I just want to give my body as many healthy nutrients as I can give it in order for it to function properly and be strong for my next workout, and to keep up with my family and our busy life!
